The thing about recipes is – that I never follow them. I hate it when that freaks people out. I spend a lot of time searching and reading reviews and then decide on my own. I also am not in favor of buying specific items so I substitute a lot. I only buy bottles when I know I am gonna use it/ enjoy it. Doesn’t matter if that’s inexpensive, I just hate wasting it.
Hence while I am posting these recipes, please don’t let them freak you out. It’s just a direction thing to help you on a venture. But ultimately the venture is your own and you need to enjoy it. It’s like planning a vacation where your senses are going to be involved at a very high level! For few of us (like my husband), meals are very important part of our day. He is kind enough not to criticize – his favorite saying “Who are we to complain when we didn’t even help preparing it”, but his comments and face says it all on how things have turned out on his plate.
Since it is all about senses, it is important for getting that part right. The first is the smell. It has to smell delicious as that’s the first thing you notice when food is about to be served to you. And probably the last thing you want when you are going to eat a bagged lunch in a class or discussions. The next comes eyes. You need to find it yummy or elegant or fancy or plain appealing when you see it. Also, it should at least feel easy to be consumed. Then comes the tongue – which feels as well as tastes (if you are not using hands for eating – not very uncommon for few Indian dishes). You can skip the appearance but not the taste. Also, everyone’s taste palette is different. The major reason why most recipes would say salt and pepper to taste. The same goes for general spice level. Always feel free to modify it. Taste the food if you want to make changes. Recipes, as I mentioned, are to give you directions, not dictate.
Of course nutrition is a big part for anything related with the food. Specially when it is for kids! It has to be filling with right amounts for proteins, carbs, fiber, vitamins, minerals, antibacterials and good bacteria etc. Choosing one recipe for breakfast or lunch or dinner is all fine. But making sure that all necessary components are being delivered over the full day or week is a difficult thing to do. Hence make sure you get the right nutrition. I will add few other articles sometime soon.
All in all, it is important to have fun with cooking. It should not bore you with the amount of effort being put in. If that happens, go for the quick fixes and start enjoying again. So, I will let you have fun now!
