Excess of something?

There are many a times we have tons of some produce – may be it was a harvest or was in season and we bought in bulk or came from two different uncoordinated sources! We all will hate to see that rotting or getting thrown out. Here’s what I ran into and what I did with those. I will keep on adding recipes when I get time.

3. Potato

– Bharta

– Pav Bhaji

4. Eggplant

– Bharta

– Sauteed

– Broiled with Parmesan

– Sandwich with tomato and basil
